You'd just look at the "output-bin-supported" attribute for any of the "stacker-N" or "my-stacker" values.

I don't believe so, no.  Certainly no Client I am aware of will set this value.

Jobs are stacked by Set, and what constitutes a Set is determined by the multiple-document-handling attribute.  As most printers only support single-document jobs, the Set is usually one copy of the document.
