ESP Print Pro provides such a GUI; info at:

KUPS (KDE interface for CUPS) also provides a KDE-based GUI; info at:
http://cups.sourceforge.net/kups.html
Also, CUPS 1.1 provides a web-based admin/monitoring interface,
so you can use the Netscape/GNOME/KDE browser apps to do a lot of
stuff traditionally done with a GUI.
